The Payr winery is located at an altitude of 500 meters in Eppan/Berg and has been family-owned for centuries. The excellent vineyards surrounding the winery, with their clay and limestone gravel soils, give the wine its unique aromas. Old breeds of chickens roam among the vines and bee colonies buzz in the hedges. Monika and Hannes produce wine in the old cross-vaulted cellar. “Our wines are like us: down-to-earth free spirits, inspired by their natural surroundings,” they explain.The vineyards of the Payr winery are located around the farm at 500 meters in Eppan Berg. Chardonnay, Pinot Noir, and Sauvignier Gris are cultivated. The Pinot Noir grows on loamy soil, which is perfect for a fruity, delicately structured wine. Chardonnay and Sauvignier Gris are at home on limestone gravel soil made of dolomite rock.
